2 for 1 Cheesecakes: Christmas Baking & Tacky Sweaters link up

Welcome! Courtney, Elizabeth, Jamie and I are glad you could join us! I have been anticipating this link up for weeks! Not only do I enjoy baking, but when else would I be able to wear my tacky sweater with pride? So, lets get on with the desserts!

During the holidays I like to s-i-m-p-l-i-f-y; there is too much going on to fully throw myself into a complicated baking project and so I share with you my 2 for 1 semi homemade cheesecakes.

I like the combination of peppermint and chocolate and Brian enjoys nuts and caramel so I used those preferences to guide my baking. I started with store bought pie shells, in this case the classic graham cracker crust and an Oreo cookie crust, because Oreo (am I right, Liz?!)  

For the filling I went with a no bake cheesecake recipe, again, for simplicity:

Cheesecake Filling:
2- 8 oz cream cheese blocks, softened
1 cup heavy whipping cream
1/2 cup sugar
1 TBSP lemon juice, optional

Mix all ingredients in a stand mixer until combined.

Before adding the filling to the pie crusts, I wanted to jazz them up a bit more. I crushed some organic candy canes and sprinkled them into the Oreo shell and then topped with more crushed candy cane. For the caramel and pecans or "turtle cheesecake", I spread caramel sauce and chopped pecans onto the bottom of the graham shell and then topped with more sauce and pecans. Sadly, I didn't have enough pecans for the top as I would have liked, but I'm sure it'll taste just as good!

  2. Genius to take the recipe and make it into two!! I'm pretty sure that peppermint Oreo pie wouldn't stand a chance around me - YUM!! These may have to make an appearance during our Christmas dinner this year! :)

  6. You had me at Oreo pie crust!!!! I was seriously thinking "oh man, Oreo pie crust" and then I read your comment to me! Ha! You know me so well :) Seriously need to make this! I always want to make cheesecake but am so nervous about how hard it would be but this sounds doable!

  10. So with the no bake do you have to chill it before cutting it? I've never had any luck with the no bake. The peppermint one is calling my name. Yum!
