Don't let yesterday's post fool you, I ended my diet just in time to indulge in these ;)
Any time I think about Summer the very next thought to pop up is S'mores. So a peek into my mind would look something like this *Summers'mores*. I'm actually very surprised I haven't shared this recipe before since I've been consuming it since last year. This recipe comes from one of my favorite cookbooks of all time, Katie Lee's Endless Summer Cookbook.
S'mores Brownies
This marriage of brownies and s'mores is perfect to bring to your next Summer barbecue.
Ingredients
- 1.5 crushed graham crackers
- 3 Tablespoons sugar
- 4 Tablespoons unsalted butter, melted
- 1 box brownie mix
- 3 cups marshmallows
Instructions
1.Preheat oven to 325F. Lightly coat an 8-inch, broiler-safe baking dish with nonstick cooking spray.
2.In a bowl, combine the graham cracker crumbs and sugar and stir in the melted butter. Transfer mixture to prepared baking dish and press the crumbs evenly over the bottom of the pan. Bake until golden brown about 10-15 minutes.
3.Meanwhile, prepare the boxed brownie mix according to the package instructions. Pour brownie batter over graham cracker crust and bake for 40 minutes. (a toothpick should come out mostly clean.) Remove from oven and reposition oven rack under the broiler.
4.Preheat the broiler.
5.Top the brownie with marshmallows and put pan under the broiler for 1 to 2 minutes with the oven door open a few inches and just until the marshmallows are toasted. This happens quickly so watch closely.
6.Let cool completely before cutting into squares. ENJOY!
