This is hands down one of my favorite quick dinners. I could seriously eat this once a week. Sadly, there is usually no leftovers after I make this. I think what I like best about this pasta dish is the precooked Italian sausage (we LOVE this brand in mild, fingers crossed you can find it!!!); it's ready to eat just heat it up and you've saved yourself fry time and oil burns- please tell me I'm not the only one who gets burned cooking sausage?!
This recipe also stars summer vegetables so extra points if you use homegrown ;)
Quick and Easy Pasta
A quick and delicious pasta dish using summer vegetables.
Ingredients
- 5 links Italian sausage
- 1 16oz box Pasta
- 3 Tablespoons Olive Oil
- 3 garlic cloves, minced
- 1 onion diced
- 2 zucchini diced
- 15 cherry tomatoes, halved
- salt and pepper to taste
- Parmesan cheese, grated
Instructions
1. Boil pasta according to box instructions. Drain and set aside.
2. Heat olive oil in a skillet over medium heat and saute diced onion, garlic and zucchini.
3. Add halved cherry tomatoes and Italian sausage to vegetables and cook until sausage is heated through, 3 minutes.
4. Add drained pasta to skillet and season with salt and pepper and top with Parmesan cheese. ENJOY!

ReplyDeleteYay for garden veggies friend. I have THE WORST luck with zucchini. The squash bugs get out of hand so quick and then my organic garden goes to pot when I have to use pesticides. I really don't want to do that so I just don't grow them.
